I learned how to make this dish from a friend who grew up in Cadiz. It's delicious, simmers beautifully on the stove to warm the house on a cold winter's day, and can be made in a slow cooker f you want it to be ready when you get home from work.1/4 cup/60ml good olive oil 1 chicken, cut up into serving pieces, or 8-10 chicken thighs (cook with skin and bones intact for better flavor) 2 heads (yes heads, not cloves!) garlic, cloves separated, peeled and minced (do not crush in a press; the texture will be wrong) 5ml/1 tsp. dry thyme 325ml (1/2 bottle) dry white wine or more as needed (choose a Spanish wine such as Torres Vinasol) 10ml/2 tsp. sweet smoked Spanish paprika (do not substitute Hungarian or worse, US supermarket paprika; the former is good but the wrong flavor and the latter is just tasteless ground red cardboard) Salt and freshly ground black pepper to taste Generous handful chopped fresh flat-leaf parsley Heat the oil in a heavy-bottomed Dutch oven and brown the chicken but do not cook through. Remove to a plate. Add the garlic to the oil and cook, stirring, until golden. Take care not to burn any...

2 small chickesn about 3 pounds each, cut in serving pieces 1/2 cup olive oil 1 clove garlic 1/2 tablespoon rosemary 1 2/4 teaspoon salt 1/4 teaspoon pepper 2/3 cups wine vinegar 1 cup red Chianti or other dry red wine 3 tablespoons tomato paste 1/3 cup chicken broth or waterCook chicken, garlic and oil in skillet over a high flame for about 5 minutes, turning constantly. Remove garlic. Mix salt, pepper, rosemary, vinegar and wine together. Add to chicken and simmer uncovered until liquid is reduced 1/3, about 10 minutes. Dissolve tomato past in chicken broth or water and pour over chicken. Simmer covered for 20 minutes.
Diabetic Oriental Fish and Rice
1 package (6.2 ounce) fried rice (rice an vermicelli mix with almonds and Oriental seasonings) 2 Tablespoon margarine or butter 2 cups water 1/2 teaspoon grated lemon peel 1 bag (1 pound) frozen corn, broccoli and red peppers, thawed 1 pound mild-flavored fish fillets, about 1/2 inch thick 1/2 teaspoon lemon-pepper seasoning 1 tablespoon lemon juice 2 tablespoon fresh parsley, choppedIn 12 inch nonstick skillet, cook rice and margarine over medium heat 2 to 3 minutes stirring occasionally, until rice is golden brown. Stir in water, seasoning packet from rice mix (rice-a-roni) and lemon peel. Heat to boiling; reduce heat. Cover and simmer 10 minutes.Stir i vegetables. Heat to boiling, stirring occasionally. Cut fish into 4 serving pieces; arrange on rice mixture. Sprinkle fish with lemon-pepper seasoning; drizzle with lemon juice. Reduce heat. Cover and simmer 8 to 10 minutes or until fish slakes easily with fork and vegetables are tender.Sprinkle with parsley.serves 4

I'm wondering about dishes and cutlery. I wonder how important it is to you...do you use special dishes or serving pieces passed down in your family? Did you get some at yard sales or thrift shops? Did you take a lot of time before marraige - if married - to choose patterns and types? Did you get a set or two as presents? Do you have a set for family and one for company/holidays?What do you have and how important are things like that to you?
My mom's fried chicken...
Let me share to you how my mom cooks her very special friend chicken;Ingredients: Chicken cut into serving pieces, crushed garlic, vinegar, soy sauce, dried bay leaf (one piece only), ground pepper and seasoning. Marinade the chicken into all following ingredients preferably overnight. Let it simmer in medium heat until the chicken cooks and the marinate reduced. Deep fry the chicken until golden brown and put a mixture of cornstarch and water and simmer for five minutes. Viola!!! savory chicken served with french fries on the side and chicken beside a steaming rice. Bon appetit...
